Happy Cinco de Mayo!! I love a good restaurant sty Happy Cinco de Mayo!! I love a good restaurant style salsa and a homemade version is even better! I found this recipe years ago in one of @thepioneerwoman cookbooks and the ingredients has been a staple in our house ever since! It’s so simple to make…it’s mainly a dump recipe! 

Full recipe below! Comment RECIPE sand I’ll send you the link to our favorite spring recipe e-book that includes this salsa and our favorite chicken enchiladas…perfect for Cinco de Mayo! 

1 28 oz can whole tomatoes 
1 can original Rotel
1 can mild Rotel
1 jalapeño (I remove rib and seeds) 
1/2 cup diced onion
1 tsp minced garlic
1/4 tsp sugar
1/4 tsp salt
1/4 tsp cumin
Cilantro to taste
Juice of 1/2 lime

In a blender/food processor dump cans of tomato and Rotel (including juice). Add onion, cilantro, jalapeño, lime juice and spices. Blend until consistency you prefer…I don’t like my salsa too chunky! You can serve immediately and store in a large mason jar in the fridge! Enjoy ❤️!!

🍳Starbucks Dupe Egg Cups🍳 We’ve been tryi 🍳Starbucks Dupe Egg Cups🍳

We’ve been trying to hit our protien goals and if you’re trying to do the same, you know it’s HARD! These little egg cups have 14g of protein per cup and are so yummy! The recipe I make is below, but you can add whatever meat, veggies and cheese you like! The secret ingredient?!? Cottage cheese! Just blend the eggs and cottage cheese up together and no one will know it’s in there😉! Also…don’t skip the water in a baking dish. It creates steam which makes the egg cups the perfect consistency! Hope you love them as much as we do!

Egg Cups:
8 large eggs
2/3 cup cottage cheese 
1/2 cup Fairlife milk 
1 cup shredded cheese of your choice 
1lb ground sausage browned and drained 
1/2 teaspoon salt
1/4 teaspoon black pepper 

•Preheat oven to 300 degrees F and spray a muffin tin with cooking spray. 
•In a blender mix eggs and cottage cheese. Mix in browned sausage, milk, cheese and salt and pepper. 
•Pour mixture into prepared muffin tin filling about 2/3 full. 
•Place a baking dish with water on bottom rack of oven and muffin tin above. 
•Bake on 300 for 30 min. Allow to cool before removing egg cups from muffin tin. 
•store in fridge until ready to serve! Enjoy!

🍌Vanilla Protein Banana Bread🍌 1 2/3 cup al 🍌Vanilla Protein Banana Bread🍌

1 2/3 cup all purpose flour
1 full scoop vanilla protein powder 
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon 
3-4 overripe bananas mashed
2 large eggs 
1/4 cup vanilla Greek yogurt (I used @chobani zero sugar)
1/2 cup applesauce 
1/2 cup honey
1 teaspoon vanilla extract 
Chocolate chips (optional)
Nuts (optional) 

Preheat oven to 350 F. In a large mixing bowl add dry ingredients and mix well. In a separate large mixing bowl mash bananas and add beaten eggs, honey, Greek yogurt, applesauce and vanilla extract. Mix well and slowly incorporate dry ingredients to banana mixture. Pour mixture into a parchment lined loaf pan. Bake on 350 for 60min or until knife comes out clean from center of loaf. Remove from pan and allow to cool a bit before cutting. This recipe should make around 12 servings with around 5 grams of protein per serving. Add chocolate chips or nuts if you’d like! Enjoy!

I made a homemade strawberry simple syrup for this cocktail by cutting up a cup of strawberries and boiling them with 1 cup of sugar and one cup of water. I strained the strawberries out and put the syrup in a jar in the fridge! Here’s the recipe for the cocktail…let me know if you give it a try! 

1 oz strawberry simple syrup 
2 oz bourbon (I’m using @hardtruthspirits Sweet Mash)
4 oz lemonade 
Crushed ice 
Lemon wheel for garnish 

Mix all together in a sugary rim cocktail glass or mix in a shaker. Serve with crushed ice and a lemon wheel! 

Enjoy!

My latest obsession?? Homemade ranch dressing! It My latest obsession?? Homemade ranch dressing! It is THE BEST! Once you try this recipe you won’t ever want the store bought stuff with all the weird ingredients again! 

My recipe is below! You can adjust the spices based on your preference. I like to mix everything in a wide mouth pint jar with a lid and shake until mixed well. For the best taste, let the ranch dressing sit in the fridge overnight before serving.

If you love ranch dressing, give this a try and share it with a friend ❤️!

Homemade Ranch Dressing 
1/2 cup good Mayo (@dukes_mayonnaise is my go to)
1/2 cup buttermilk 
1/2 cup sour cream 
1 teaspoon dill
1 teaspoon chives
1 teaspoon parsley 
1/2 teaspoon garlic powder 
1/2 teaspoon onion powder 
1/4 teaspoons fine sea salt
1/4 teaspoon black pepper
1-3 teaspoons lemon juice…according to taste

Add all ingredients to a wide mouth pint @ballcanning jar and mix well. For best taste and consistency, allow ranch dressing to sit overnight in fridge before serving. 
Enjoy!

Also, let’s talk about how to get those gorgeous ruffles!! The variety you grow matters more than anything! You want to grow varieties that tend to throw multiple petals instead of singles. My favorite varieties are Oklahoma, Queen Lime and Benary! 

For fuller zinnias with more ruffles…I like to wait a bit to pick my zinnias. A zinnia is ready to be picked as soon as the stem is stiff and the flower head no longer wiggles when you shake the stem. But, if you want full blooms with lots of ruffles, wait to pick! You will start to see more rows of petals forming and the color starts to change or age just a bit, giving more of an ombré look! That’s my favorite stage to pick a zinnia! They look so unique and beautiful! They resemble a dahlia without all the fussiness associated with growing them!
