My mom has been making waffles for our Christmas Eve breakfast for years and she says the key to getting the classic belgian waffle texture is to use stiffened egg whites! The stiffened egg whites give that traditional golden brown, crispy edge with a light and fluffy texture inside. I like to use a deep, round waffle maker for this recipe! How to Store and Freeze Belgian Waffles
Make these belgian waffles ahead of time (or keep leftovers) by storing them in the freezer! The best way to freeze and use as needed, is to place parchment or wax paper sheets between each waffle and store in a freezer bag or freezer safe airtight container. Freeze for 1-2 month. To reheat, place frozen waffle in a toaster or toaster oven like you would store bought toaster waffles or allow waffles to thaw completely in fridge before reheating in the microwave or oven.
