Welcome to episode 3 of the “It’s Still Summer Ser Welcome to episode 3 of the “It’s Still Summer Series”! This week I’m sharing Bourbon Apple Pear Butter! My father in law brought over pears from his pear tree so I knew I needed to make some of this delicious Bourbon Apple Pear Butter! It’s so good on sourdough toast and biscuits!  The full recipe is below! 

Bourbon Apple Pear Butter
1 1/2lb pears
1 1/2lb apples
1 cup apple juice
1 cup bourbon
1 cup brown sugar
2 tablespoons apple cider vinegar 
1 tablespoon cinnamon 
1 tablespoon vanilla
2 cinnamon sticks

*Core, peel and slice pears and apples (I normally leave skins on the apples and use vitamin to puree). 

*Add fruit to a granite pan with a lid or crockpot. If using a granite pan preheat oven to 350.

*Add apple juice, apple cider vinegar, bourbon, brown sugar, cinnamon and cinnamon sticks to the apples and pears and mix well. 

*If using a granite pan, bake on 350 for 2-3 hours. Stirring every 30 minutes. If using a crock pot, cook on low for 8 hours, stirring every two hours. Fruit should be very soft and easy to mash with a fork. 

*Wash and prepare jars and lids. 

*Remove the cinnamon sticks. Add mixture to a blender to puree or use an immersion blender and blend to a smooth consistency. 

*immediately add apple pear butter to pint jars and add lids and rings. To store for up to a year, add jars to a water bath to preserve. Without water bath, sealed jars will last up to 3-4 weeks in the fridge!

Welcome to week 2 of “It’s Still Summer” the serie Welcome to week 2 of “It’s Still Summer” the series where I’ll be sharing our favorite summer recipes before summer is over! This week I’m sharing EASY refrigerator dill pickles! My favorite way to use up all the garden cucumbers!

Refrigerator Cucumbers:
Pickling Cucumbers
4-6 garlic cloves
4 sprigs of fresh dill
1 Tblsp Kosher salt
2/3 cup vinegar 
1 cup water

Cut pickling cucumbers into spears (long enough to fit into a pint jar. To the bottom of the jar add salt, 2-3 garlic cloves and two sprigs of dill. Add the cucumber spears. In a sauce pan, bring vinegar and water to a boil. Remove from heat and pour vinegar/water over the spears…covering completely. Add 2-3 more garlic cloves and two more sprigs of dill and tighten lid. Turn jar upside to dissolve salt. Let sit until cool and refrigerate. Flip jars end over end each day for least 7 days. For the best quality and crispness, use within 1 month from canning. Keep in the fridge!
