My husband loves big, crispy Belgian waffles and this recipe is his favorite! The key to getting the classic belgian waffle texture is to use stiffened egg whites! The stiffened egg whites give that traditional golden brown, crispy edge with a light and fluffy texture inside. The kefir gives these waffles extra protein and a rich and tangy flavor.

What You Will Need-Grocery List
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1 scoop vanilla protein powder
- 1/2 teaspoon salt
- 2 eggs (separate egg whites and yolk)
- 1/2 cup granulated sugar
- 3/4 cup melted unsalted butter for batter and additional 2 tablespoons melted butter for waffle maker
- 2 cups Lifeway Kefir
- 1 tablespoon vanilla extract
- Waffle maker
How to Make Protein Belgian Waffles
- Separate eggs by 2 placing egg whites in a stand mixer with a whisk attachment (you can use a hand mixer) and place 2 egg yolks in a separate large mixing bowl. In stand mixer, whisk egg whites on high speed until egg whites form stiff peaks (this will take a few minutes).
- In the mixing bowl with the egg yolks, add 1/2 cup sugar, 3/4 cup melted butter, 2 cups kefir and 1 tablespoon vanilla. Whisk together until smooth.
- In a separate mixing bowl, mix together 2 cups all purpose flour, 1 tablespoon baking powder, 1 scoop vanilla protein powder and 1/2 teaspoon salt.
- Add dry ingredients to the wet ingredients a little at a time, mixing until well combined. Batter may have a few lumps and that is ok. Do not over mix.
- Gently fold egg whites into the batter using a dough whisk or silicone spatula. The batter will be thick.
- Preheat waffle maker.
- Melt 2 tablespoons butter and baste on waffle maker with a silicone pastry brush.
- Pour batter onto waffle maker (see your waffle maker instructions for suggested amount).
- Cook waffle mixture according to your waffle maker instructions.
- Remove and serve warm with favorite toppings!
How to Store and Freeze Belgian Waffles
Make these belgian waffles ahead of time (or keep leftovers) by storing them in the freezer! The best way to freeze and use as needed, is to place parchment or wax paper sheets between each waffle and store in a freezer bag or freezer safe airtight container. Freeze for 1-2 month. To reheat, place frozen waffle in a toaster or toaster oven like you would store bought toaster waffles or allow waffles to thaw completely in fridge before reheating in the microwave or oven.
