Canning is one skill I’m so glad I learned from my grandma…and a skill I hope to be able to pass down to my girls and granddaughters one day too. It’s not as hard or intimidating as it may seem! Welcome to week 2 of “It’s Still Summer” the serie

Welcome to week 2 of “It’s Still Summer” the series where I’ll be sharing our favorite summer recipes before summer is over! This week I’m sharing EASY refrigerator dill pickles! My favorite way to use up all the garden cucumbers!

Refrigerator Cucumbers:
Pickling Cucumbers
4-6 garlic cloves
4 sprigs of fresh dill
1 Tblsp Kosher salt
2/3 cup vinegar
1 cup water

Cut pickling cucumbers into spears (long enough to fit into a pint jar. To the bottom of the jar add salt, 2-3 garlic cloves and two sprigs of dill. Add the cucumber spears. In a sauce pan, bring vinegar and water to a boil. Remove from heat and pour vinegar/water over the spears…covering completely. Add 2-3 more garlic cloves and two more sprigs of dill and tighten lid. Turn jar upside to dissolve salt. Let sit until cool and refrigerate. Flip jars end over end each day for least 7 days. For the best quality and crispness, use within 1 month from canning. Keep in the fridge!
